Grainfather Water Volumes Made Simple
Hit your target volume and gravity every time
Getting your water volumes right is one of the biggest differences between an average brew and a consistent one. Too much water and your beer is thin. Too little and your gravity shoots up.
The good news is that a Grainfather system makes this easy once you understand a few key numbers.
The three water stages you need to understand
Every all-grain brew comes down to three simple parts:
Strike water
The water you mash in with
Sparge water
The water used to rinse sugars from the grain
Final volume
What ends up in your fermenter
Get these right and everything else falls into place.
Strike water made simple
Your strike water is based on your grain bill.
A good starting point on a Grainfather system is:
2.7 to 3.0 litres of water per kg of grain
Example:
5 kg grain = ±13.5 to 15 litres strike water
This gives you a mash that is thick enough for good conversion but loose enough for proper recirculation.
Understanding grain absorption
Grain holds onto water — this is one of the most common things brewers underestimate.
Rule of thumb:
Grain absorbs ±0.8 to 1.0 litre per kg
Example:
5 kg grain = ±4 to 5 litres lost in the mash
If you don’t account for this your final volume will always be short.
Sparge water — where most brewers go wrong
Sparging is not about blasting water through the grain. It’s about gently rinsing remaining sugars.
Best practice:
- Use water at ±75–78°C
- Pour slowly and evenly
- Keep the grain bed covered
- Avoid rushing
Too fast = lower efficiency
Too slow = wasted time
Hitting your target volume
Here’s the simple way to think about it:
Target fermenter volume + boil-off + losses = total water needed
Typical numbers for a Grainfather brew:
- Boil-off: ±2.5 to 3.5 litres per hour
- Trub and transfer losses: ±1 to 2 litres
Quick example
Let’s say you want 20 litres into the fermenter
Add:
- 3 litres boil-off
- 1.5 litres losses
Total needed pre-boil: ±24.5 litres
Now add grain absorption (±4.5 litres for 5 kg grain)
Total water required: ±29 litres
Split between:
- Strike water: ±14 litres
- Sparge water: ±15 litres

If your volumes are always off don’t guess — measure your system. Once you know your real boil-off and losses your brew day becomes repeatable and predictable.
